Rebel City Distillery is a new, small boutique distillery located on the River Lee in the Irish city of Cork. The distillery opened its doors in 2020, and at Ginbutler we have been quick to import their very first gin to Denmark.
The founders are Robert and Bhagya, who are also husband and wife on a daily basis. Robert is originally a biochemist, but he also completed a master's degree in brewing and distilling at The Heriot-Watt University in Edinburgh. Before he chose to open his own distillery, he worked with gin production in several other places, including at The Shed Distillery, which makes Drumshanbo Gunpowder Irish Gin .
Robert's wife, Bhagya, originally comes from the state of Kerala in India. She is a software developer and currently works for Dell in Ireland, but spends her free time at the distillery. It is also her hometown in India that has been the inspiration for the distillery's first gin.
Kerala culture was originally matriarchal, which is why Robert and Bhagya have chosen the name Maharani for their gin. It means "Queen" in the local language, Malayalam, and the gin is intended as a tribute to all independent and strong women around the world.
The gin is distilled with the citrus fruit pomelo, and it is spiced with cassia cinnamon and nutmeg. The latter is the red seed coat, which runs on the outside of the nutmeg, and which has a slightly milder taste than the nut itself. All three ingredients come from Kerala, specifically from an organic farming community run entirely by women.
The gin is citrusy, and it is therefore good with a classic tonic and a slice of dried orange or grape.
